Whipped Barrel-aged Feta, Olive Oil & Truffle Honey with Panettone Crisp
Created to showcase this year’s Christmas gift, this whipped feta perfectly showcases the high-quality Italian olive oil, crafted on the family grove in Puglia of our Senior Creative, Flaminia. A simple and shareable dip, the perfect addition to your festive table.
Ingredients List
Whipped feta
- 200g Barrel-aged feta crumbled
- 75g Full-fat Greek yoghurt
- 100g Full-fat cream cheese
Panettone crisps
- Panettone
- Olive oil
- Maldon sea salt flakes
Garnish
- Truffle honey
- Olive oil
- Roasted and chopped pistachios
- Clementine
- Espelette pepper
Method
1. Add the feta, cream cheese and Greek yoghurt to a mixing bowl fitted with a whisk attachment and whisk until fully incorporated and smooth.
2. For the Panettone crisps, oil a flat baking tray. Slice the Panettone thinly and place on the oiled tray, drizzle more olive oil over the panettone slices and sprinkle with Maldon sea salt flakes.
3. Bake in a preheated oven at 180 degrees until slightly brown and crisp. Remove and allow it to cool completely.
4. Place the whipped feta in a bowl, and top with truffle honey. Add a generous drizzle of olive oil, a sprinkle of sea salt, and chopped pistachios. Finish with espelette pepper and clementine zest.
